Evidence belongs beside the recipe

Norcook currently operates as an editorial recipe archive. Newsletter acquisition, advertising, affiliate commerce, and behavioural analytics are dormant until their owners, evidence, and legal basis are confirmed.

Raw cured fish, cold-smoked fish, fermented fish, home curing, ready-to-eat cured meat, and refrigerated fish pickles are flagged in structured content. Their page-level callouts link to public-health authorities and name the review status and date.

On July 21, 2026, the unsafe home fenalår procedure was replaced with a serving guide for professionally produced meat, and the unsupported 24-hour parasite-freezing claim on gravlaks was removed.

Every recipe carries an evidence block: who stands behind the page, when its content was last checked, the sources that back it, and any adaptation or uncertainty worth stating. Region and season hubs carry the same block in the form of a source panel.

“Checked” is not “reviewed”, and the wording is deliberate. A checked date means someone read the page against the archive on that date. It does not mean a qualified specialist assessed it. Where a recipe has no page-level source, the block says so outright rather than implying one, and the cultural background is presented as general context.

No individual author is named anywhere on the site, and the recipe structured data asserts no author either. A byline is a claim about a real person or entity; until a legal operator is published there is none to name, and inventing one would be a worse defect than the gap it fills.

A qualified food-safety owner has not been named for every safety-sensitive recipe. A sensitive page must say “Qualified reviewer pending,” and may not say “reviewed,” “safe,” or “validated” until a named specialist records scope, evidence, date, decision, and next review date for that recipe. The release content check enforces source coverage for the current sensitive set.

Norcook identifies Oak and Main Developers LLC as its legal entity, but a complete legal-operator record remains unpublished. The site therefore names neither an individual author nor an accountable safety reviewer, and it remains an editorial archive rather than a commercially launched service.

The archive no longer contains or displays hard-coded recipe ratings, review counts, or the 40,000-reader claim. Those claims may return only when a production system of record and calculation method are documented.

Corrections should update both the recipe and its evidence panel, add a dated note when the safety meaning changes, and pass the same lint, type, content, image, build, audit, browser, accessibility, and performance gates as code changes.
