Bidos is the ceremonial dish of Sápmi, ladled out at weddings, confirmations and midwinter gatherings. Built from a single reindeer and the roots that survive the Arctic cellar, it is a stew that carries the whole community around one pot.

Step-by-Step Instructions

    Cut the reindeer into bite-sized chunks, keeping the bones for their flavour. Place the meat and bones in a large pot and cover with the water.

    Bring to the boil, then skim off any foam that rises to the surface.

    Reduce the heat and simmer gently for 1 to 1.5 hours, until the meat is tender.

    Add the carrots, onion and potatoes, and simmer for a further 20 to 25 minutes, until the vegetables are soft.

    Season with salt and pepper, and serve with warm gáhkku flatbread.

Reindeer is exceptionally lean, so hold the pot at a bare simmer rather than a rolling boil — hard heat tightens the meat and clouds the broth.
