Fjellørret
Whole mountain trout crisped in brown butter with almonds, its flesh sweet from ice-cold water.
Cultural Context & History
Pulled from high, glacial lakes, mountain trout needs almost nothing — a hot pan, foaming butter and a squeeze of lemon. It is the taste of a fishing trip above the treeline.
Ingredients
- 2 whole fresh mountain trout, cleaned, heads on or off
- 4 tbsp wheat flour
- 1 tsp salt, 1/2 tsp black pepper
- 3 tbsp butter, for frying
- 150 ml sour cream (seterrømme)
- Fresh dill, to garnish
Recommended Tools
- Cast-iron skilletHolds an even heat so the skin crisps without scorching.
- Fish sliceTurns the whole trout without tearing the fragile skin.

Step-by-Step Instructions
- 1
Rinse the trout inside and out and pat thoroughly dry with paper towels.
- 2
Mix the flour with the salt and pepper on a plate, then dredge each trout, coating it evenly.
- 3
Melt the butter in a skillet over medium-high heat and fry the trout for 4–5 minutes per side, until the skin is crisp and the flesh flakes easily.
- 4
Pour the sour cream into the pan around the fish and simmer for 2 minutes to make a rich sauce. Scatter with dill and serve.
Chef's Tip
Dry the skin really well before it goes into the flour — any surface moisture steams instead of crisping, and it is the crackling skin that makes this dish.
Chef's Tip
Keep the sour cream at a gentle simmer once it goes in; a hard boil will split it, where a soft two-minute bubble leaves you a glossy, unbroken sauce.
