Mix all the dough ingredients and knead for 10 minutes until smooth and elastic. Cover and leave to rise for 1 hour, until doubled.

Roll the dough out to a large rectangle, spread with the soft butter, and scatter over the sugar and freshly crushed cardamom seeds.

Fold the dough over on itself, slice into strips, then twist and knot each one.
