Step-by-Step Instructions

    Rub the reindeer roast all over with the salt and pepper, then sear in the butter in a hot pan until deeply browned on every side.

    Transfer to a baking dish with the chopped carrots and onion, pour in the game stock, and insert a probe thermometer into the centre of the meat.

    Roast at 125°C (255°F) until the internal temperature reaches 60°C (140°F) for medium-rare.

    Wrap the roast loosely in foil and let it rest for 15 to 20 minutes so the juices settle.

    Whisk the pan drippings with the sour cream and brown cheese and simmer for 5 minutes, then slice the roast and serve with the gravy.

Reindeer is exceptionally lean, so pull it at 58°C and let carryover heat carry it to 60°C — a few minutes beyond that and the meat turns dry and livery.
