Step-by-Step Instructions

  1. 1

Season the grouse inside and out with salt and pepper, then wrap the breasts in bacon to keep the lean meat from drying.

  2. 2

Brown the birds well on all sides in butter in a hot casserole.

  3. 3

Pour in the game stock and crushed juniper berries, cover, and simmer gently for 30–35 minutes.

  4. 4

Lift out the grouse and leave to rest while you finish the sauce.

  5. 5

Whisk the sour cream and brown cheese into the pot liquids and boil for 5 minutes until thick and glossy, then carve the breasts and serve with the rich gravy.

Chef's Tip

Grate the brown cheese rather than dropping in slices — it dissolves evenly into the cream instead of sitting in stubborn slabs.

Chef's Tip

Rest the birds breast-down under foil so the juices settle back through the drier meat before carving.
